Our Story
Time-honored traditions for the way you snack today
Founder Carlos Salinas spent his childhood in Mexico learning the family recipes at his mother’s side – passed down from traditions of the Aztecs and Mayans.
Carlos carried those traditions into adulthood, mixing up from-scratch salsa in his own kitchen to share the marriage of authentic flavors and ultra-fresh ingredients with friends. When a party guest begged him to make 300 jars of the salsa as gifts for her employees, Carlos realized it was time to introduce his family’s recipes to the world, and he founded Xochitl in 1995. But salsa of this quality needed a chip to match – something light, crisp and rich with the same culinary traditions.
Today, Xochitl chips and salsa are frequently ranked among the best in the country – because, while we now make enough to send to a grocery store near you, we never abandoned the step-above ingredients and time-honored cooking methods that made these foods irresistible.
Xochitl (so-cheel) means “flower” in the Aztec language Nahuatl.
Salsa Recipes
Inspired by ancient methods for timeless taste
For our salsa, we source next-level ingredients, such as fire-roasted jalapeños and tomatillos, or sun-dried, slow-roasted Mexican chipotles – or even cold-pressed extra-virgin olive oil. We adapt traditional preparation methods, crushing and grinding ingredients to bring out flavors and achieve bold chunkiness reminiscent of salsa ground with molcajete and tejolote – mortar and pestle.

We do it all ourselves from scratch: Start with whole kernel corn, cook it, steep it in limewater overnight, wash it and then grind it into flour. We roll out the dough to the perfect thinness, then oven-bake and seal in that perfectly balanced crispness with a quick fry in organic palm olein oil refined from the fruit of a palm tree – fresh oil for every single batch - and finish with a sprinkling of salt mined from an ancient seabed in modern-day Utah.

This oil requires fewer resources to grow and lasts longer than other oils, ultimately bringing you better flavor while reducing our carbon footprint.
